Tandoor (India) It's true: that iconic Indian tandoori chicken you've known (and perhaps loved) for ages is considered a barbecue dish. Tandoori food derives its name from the tandoor, the cauldron-like clay oven in which dishes such as naan bread, chicken, seafood and other meats are cooked under high-heat charcoal.

A barbecued chicken is that which is cooked over barbecue pit, at a low heat and a tandoori chicken is cooked in a Tandoor, oven, with very high temperatures and this Tandoor can be used to cook variety of food.

BBQ began on the islands in the Caribbean Sea. Spanish explorers led by Christopher Columbus found Native Americans slow smoking meats in the land he called Hispanoila. These Taino-Arawak and Caribbean natives used green wood to smoke meat over indirect heat.

While barbecue certainly did not originate in America, it does have a very important significance in American culture and history. While barbecue itself dates as far back as the middle ages, North American barbecue is thought to have begun among indigenous people of the Caribbean.
